Latkas al Fresco

What do you do when Christmas and Hanukkah fall on the same and AND your Jewish wife wants Latkas AND you don’t want the whole house smelling like grease? Take the party outside. These latkas are stupid easy. Bake Russet potatoes and chill overnight. Peel and grate them on a cheese grater along with a small sweet onion. Form into golf ball sized balls and flatten. Drop in canola or peanut oil in the cast iron skillet on a 30 dollar Butane fueled camping stove. Serve with sour cream, applesauce and ketchup so everyone is happy. Pro tip - cook pink lady apple slices over low heat, remove skins after they cook and you have a lovely pink applesauce. Hat tip to Anna Lyman for that twist!
